Healthy Banana Bread Matcha Slice
Banana bread, but make it matcha. These easy no-bake bars combine our Banana Bread Matcha with almond meal, oats and banana, then get finished with a thick layer of dark chocolate and flaky sea salt. They take just 15 minutes to prep and are seriously hard to keep in the fridge.
Ingredients
Base
- 1 1/2 cups almond meal
- 1/2 cup rolled oats, blended into a flour
- 1 1/2 tsp Morning Made Banana Bread Matcha
- 1/2 tsp cinnamon
- Pinch of salt
- 1/3 cup almond butter
- 1 tbsp maple syrup
- 2 tbsp melted coconut oil
- 1 tsp vanilla
Banana layer
- 1-2 ripe but still firm bananas, sliced into rounds
Chocolate topping
- 150g dark chocolate
- 1 tbsp coconut oil
- Pinch of flaky sea salt, optional
Method
- Prep the tin. Line a small loaf tin or square container with baking paper.
- Combine dry ingredients. Mix the almond meal, oat flour, Morning Made Banana Bread Matcha, cinnamon, and salt in a bowl.
- Make the dough. Stir through the almond butter, maple syrup, coconut oil, and vanilla until you have a sticky dough.
- Press the base. Press the dough firmly and evenly into the lined tin.
- Layer the banana. Arrange the banana slices in a single layer across the entire base.
- Add the chocolate. Melt the dark chocolate with the coconut oil, then pour over the bananas and spread to completely cover.
- Season. Sprinkle with flaky sea salt, if using.
- Chill. Refrigerate for 1-2 hours, until firm.
- Slice and store. Cut into bars or squares and keep refrigerated.
