Viral Rice Paper Mochi

Ingredients
- 2 cups coconut yogurt, separated into two bowls
- 1½ tsp Morning Made Strawberry Matcha Latte
- 1½ tsp Morning Made Mango Matcha Latte
- 2 rice paper wrappers
- Chopped strawberries
- Chopped mango
- Arrowroot starch
Method
- Mix. Divide coconut yogurt into two bowls. In one, mix in Morning Made Strawberry Matcha Latte and chopped strawberries. In the other, mix in Morning Made Mango Matcha Latte and chopped mango.
- Prep wrapper. Dip a rice paper wrapper in water until pliable and place it over a bowl or flat surface.
- Fill. Place a scoop of the fruit and yogurt mixture into the center of the rice paper.
- Wrap. Carefully fold the rice paper around the filling to form a mochi shape.
- Coat. Roll each mochi in arrowroot starch to prevent sticking.
- Freeze. Place in the freezer for 1 hour before serving.
